I have a number of DVDs that have 2.0 surround. How does this provide
surround sound?

It is like the oringinal 2 channel analog surround sound, the surround
channels are encoded in the 2 channels and then during playback the
surround sound decoder extracts the center and two rear channels. The
DVD audio is two channel digital rather than analog, but the concept
is the same.

The numbereing on DVD packaging just tells you the number of channels
used in the digital stream.

2.0 is good old fashioned stereo with no LFE.

You could choose to decode it wth an old Dolby, or other, decoder,
which will give a surround effect, but it won't be properly encoded at
source.
